Yeah, this happened to me overnight as well. Got the prompt for 18.7.8, and I allowed to install it over night. I wanted to avoid iOS 26 on this aging iPhone 13 Mini I, but hey, a security update sounds great.
Now I woke up today with the iOS 26 Welcome Screen. Great. No way to revert this. Additionally I was on call, and I would bet money that the Welcome Screen meant I was not fully logged in (corroborated by the fact that I had to enter my SIM PIN after completing it). That is really, REALLY user hostile.
