I absolutely turn down (or end and leave) interviews where this sort of thing is involved. I think that the willingness of companies to engage in these practices is a good indicator that I'll be a poor fit in them.
Fortunately, I rarely encounter riddle interviews, and have never encountered leetcode in interviews. This is likely because the companies that do this sort of thing are also companies that I already know I'd be unhappy at, so I don't apply to them in the first place.
