A couple things happen in notes for me:

* Practice through writing: a way of consolidating what I learn by writing about it in an environment I don’t care about editing.

* Chicken scratch: Small important todos or trigger words to remind me to remember or do something

* Spaced repetition: memorizing elementary concepts

* Journal: this is mainly therapeutic and happens with pen and paper or something and is largely throwaway once it is written.
