The process of getting rid of google is very much akin to the process of getting rid of closed source. You may lose some functionality or maybe some polish or convenience but on the whole it is definitely doable.
The hardest ones to get rid of imo are adsense, adwords and docs.
For everything else there are reasonable replacements.
