Try Niagara Launcher. It does exactly that. You just have to long press the app to hide it from app list.

It's currently my favorite launcher. I decided to try it one day and suddenly I couldn't switch back to lawnchair launcher. Even when I tried Ratio launcher, my long waited beta launcher, it couldn't replace it.

Niagara, no matter how nice, collects way to much data for my liking. It's a good thing that you mentioned Ratio too, because it also lets me accomplish the same thing while also being privacy oriented. Thanks!
