GNOME if using a touchscreen-enabled device, LXDE (mind you, not LxQt) / Xfce otherwise. It would be nice to have a lightweight but genuinely full-featured environment under Wayland - maybe someone should pick up https://github.com/raspberrypi/maynard ?
