Any simple options for automating periodic captures of voting results?

I'm wondering what folks would suggest as the easiest route to get an automated screen grab / scrapes of some County Registrar websites, capturing the results every 15 minutes or so / as they come in on election day?

Why? Well, my dad has been on the hunt for shenanigans and seems convinced that enlisting a few friends to print to PDF some of these results on election night could.... somehow be useful signal to help detect voting total irregularities. Mind you he's 70, so at least he's keeping busy!

Personally, I think if the election totals are going to be manipulated (not entirely improbable, although the vote suppression game is pretty strong this cycle), they'll be done upstream at the tabulator level and using some combination of flipping/over-under tactics that have been alleged for the last half dozen cycles.

Anyways, I have one failed experience spinning up an AWS cluster and using code I found online...so basically I'm asking if folks know of any semi-affordable / quasi plug n play options that could scale to perhaps a few dozen counties in Ohio, FL, TX, CA, etc....before I just let him do his thing.
